I am not a morning person. Ask anyone who knows me and they will tell you that when I first wake up, I stumble around, mumble my words and am generally incoherent for at least the first thirty minutes. It’s this reason that I desperately need – and adore – super simple breakfast recipes. One of my favorites is my bacon, egg and cheese casserole recipe. Not only is it delicious but it’s super easy to make when I’m stumbling around. These ham, egg and cheese enchiladas take a close second as my favorite though. A real close second.

I love enchiladas. No really. They’re one of my favorite casserole style Tex-Mex recipes hands down.I would eat them a couple times a week if I could, but unfortunately – for me – my family is not as big on them as I am.
It all makes me incredibly sad. Tex-Mex loves them so why can’t they love it back?

This recipe though; my entire family loves it! Tex-mex fans or not, enchilada lovers or not; they can’t get enough of it!
It’s that delicious!
and of course, since we love to have it as a breakfast casserole, it’s incredibly simple to make.

Ham & Cheese Enchilada Casserole
It does get better though. This enchilada casserole recipe is not only amazing for breakfast, but it makes a great dinner recipe as well! We frequently have it for dinner on nights when I really don’t feel like doing anything too extensive.
If you’re serving it for breakfast or brunch, it pairs very well with hash browns and fruit. For dinner, it stands on it’s own really once you add toppings.
How Much Do Ham, Egg and Cheese Enchiladas Cost to Make?
While I wouldn’t call these a true pantry meal, they have a cost like one since quite a few of the ingredients are likely to already be in your pantry.
Because of this, they are a fairly budget friendly meal to make for your family.
They do top my own list of cheap family meals when I’m making out my monthly menu plan. If you don’t currently have a menu plan, you’re very likely wasting time and money! THESE are some of my favorites printable menu planners.

Can You Freeze Ham, Egg and Cheese Enchiladas?
Yes! This is one breakfast recipe that can absolutely be frozen!
To do so, make the recipe as directed using a foil baking pan with a lid.
THESE are the ones I like to use. Allow it to cool completely, then add the lid and wrap the entire baking pan in foil twice. Freeze until solid.
To reheat, remove the outer layers of foil leaving only the top covered in foil. Bake at 350°F until heated throughout.
How to Make Breakfast Enchiladas
Once you try these breakfast enchiladas, I am positive you will add them to your menu plan over and over again. As I said earlier, it doesn’t really matter which meal you’re using them for.
They’re amazing, no matter what time of day you’re eating them.
Oh and; they reheat as leftovers amazingly too!

Ingredients
- 2 c. cooked ham cubed
- ½ medium onion chopped
- 10 flour tortillas
- 2 c. shredded cheddar cheese divide 1 1/2 c. and 1/2 c. Set aside the 1/2 cup.
- 1 c. tomato seeded and chopped
- 1 c. green peppers chopped
- 1 tbsp. all-purpose flour
- 2 c milk
- 10 large eggs
- ¼ tsp. salt may be omitted
- 1 tbsp garlic powder or to taste
- black pepper to taste
Instructions
Preheat Oven to 350°F.
Beat Eggs in a medium mixing bowl. Set aside.
In large mixing bowl, combine ham, onion, tomatoes, and 1 1/2 cups of cheddar cheese. Mix well.
Lay out tortillas and place about 1/3 cup of filling slightly off center into each one.
Roll up each tortilla and place seam side down in a 9 x 13” baking dish.
Combine beaten eggs with milk, flour, garlic powder, salt, and pepper.
Pour egg mixture over the baking dish evenly.
Sprinkle remaining 1/2 cup cheese on top.
Cover with foil and bake at 350° F for 35 minutes.
After 35 minutes, uncover the dish and bake for another 10 minutes, or until the egg mixture is set and fully cooked.
Remove from the oven and allow the breakfast enchiladas to stand for 10 minutes to cool slightly.
Serve with Pico de Gallo, salsa, avocado, lettuce, sour cream or any of your favorite toppings.
