Ingredients

1 medium leek / white onion (2 cups chopped)

18 oz (500 g) Organic chicken liver

1-2 Tbsp avocado oil

250 ml (1 cup) oat fresh cream. You can use dairy cream fresh.

½ Tbsp mustard

Salt & pepper to taste

Fresh herbs for serving

Cooking Instructions

Prepare the Ingredients:

  • Clean the leek thoroughly and slice it thinly, or dice the white onion.
  • Rinse the chicken livers under cold water, remove any connective tissues or membranes, and pat them dry with paper towels. Cut into pieces (optional).

Sauté the Aromatics & Liver:

  • In a saucepan, heat the avocado oil over medium heat.
  • Add the sliced leek or diced white onion. Sauté until they turn translucent and fragrant, stirring occasionally to prevent burning, about 3-4 minutes.
  • Add the cleaned chicken livers. Allow them to brown on one side for about 2-3 minutes before flipping them to brown on the other side. Cook until they are no longer pink in the center but still tender, about 7-10 minutes in total. Do not overcook, as livers can become tough.

Add Oat Cream & Mustard:

  • Pour in the oat fresh cream and gently stir, incorporating all the flavors. Let it cook for a minute or two. Stir in the mustard. Taste and adjust the seasoning if necessary.
  • Remove the pan from heat. Garnishing with fresh herbs or a sprinkle of black pepper.

Tips and Tricks

Quality Matters: Invest in high-quality, organic chicken livers. Look for livers that are fresh, plump, and have a deep, reddish-brown color.

Perfect Searing: Patt liver dries with paper towels before cooking. Dry livers sear better, creating a flavorful crust while keeping the inside tender and juicy.

Mind the Mustard: When adding mustard, start with a small amount and taste before adding more. Mustard can vary in intensity, so it’s important not to overpower the dish.

Creamy Consistency: To achieve the perfect creamy oat cream sauce, simmer it gently over low heat. Avoid boiling the sauce vigorously, as it can cause the oat cream to curdle.

Garnish Gracefully: Garnish the plated dish with fresh herbs like parsley or chives. A sprinkle of herbs not only enhances the aesthetics but also the flavor.

Leftovers: If you have leftovers, consider incorporating them into other dishes. Cold chicken liver slices can be excellent on toast or sandwiches. Reheat gently to maintain their tenderness.

Experiment and Personalize: Don’t hesitate to experiment with additional seasonings or ingredients. You might consider a splash of white wine for depth or a hint of garlic for extra aroma. Or use fresh cream (the dish will no longer be dairy-free). Feel free to add your personal touch.

Happy cooking! 🍽️✨
